Our Mexican Feast – food from Old El Paso

As a family one of our favourite quick and easy evening meals is fajitas. Usually our fajita evenings consist of an Old El Paso fajita kit, some potato wedges, and as much salad, avocado and guacamole we can lay our hands on. I’m a veggie so we usually load the fajitas up with really well cooked vegetables and some sliced up soya burgers for a bit of protein. It’s a popular, sociable meal which we will all happily eat, it feels like a bit of a treat, but with all those veggies it’s a pretty healthy one.

I was sent a box of things to try from Old El Paso, and with Mexican food being a casual, social affair, we invited some friends around to join us for a fiesta feast!

Old El Paso

I’d never seen the “Stand ‘N’ Stuff” soft taco kit before, it contains boat shaped soft tortila shells which you fill up with whatever you want. It also contains a packet of salsa style sauce and a sachet of flavour powder. All you do is brown some mince (I used Quorn), add a drop of water and stir through the flavour powder, it is ridiculously quick and really tasty. It had a really lovely smoky BBQ flavour which would I imagine work even better with minced beef. I really, really liked these and would definitely have these again instead of our usual fajitas.

The pack also included a packet of chilli flavour mix. We are big chilli fans and I’ve been eating chilli since my fairly exotic Nan started giving it to us for our tea in the early 1980s. I love chilli and know a good one from a bad one,  this was lovely. I followed the instructions on the packet to the letter, but again used Quorn instead of minced beef. I would use this flavour packet again, maybe next time I’d add more chopped tomatoes for a slightly wetter chilli and cook it for longer to allow the flavours to develop further.

We also tried a jar of salsa – a store cupboard staple for us, and this was a lovely accompaniment to our tacos, likewise the guacamole, it’s nice to have an ambient one for the times when you just can’t make your own. Hubs who likes  a bit of heat enjoyed most of the jar of jalapeños. I wasn’t brave enough to try them and I don’t think the small boy is ready for chillies just yet.

It was a fine feast, we all ate and ate well. The shape of the soft tacos was a bit of a game changer for me, it worked really well for the small boy too, there was less food down his top than usual which is always a good sign. Old El Paso seem to have really expanded their range recently, with more taco and flavour options, I’ll be keeping an eye out for new things to try from them. 

As a family we can’t really go wrong with Mexican food, it’s so easy to eat and secretly healthy and a great way to get veg into the boys without any fuss. All that was missing were the margaritas!

Degustabox September 2015

We’ve been receiving our monthly Degustabox for 5 months now, and I really look forward to seeing what goodies I’m sent each month. We’ve discovered some pretty good stuff through getting the Degustabox, and this month was no exception. There were some familiar favourites and some new things we’ll be looking out for.

I thought this month was quite an interesting box, with a hefty nod towards sweet treats (Reese’s are the very best thing in the world. Fact.) and some useful kitchen staples (how did they know I was down to my last drizzle of olive oil?).

Between us we shared out the sweet treats, the small boy loved the Mallow & Marsh raspberry marshmallows and hubs went a bit bonkers for his favourite childhood sweets, Jelly Babies which have been given a modern update with the berry flavours.

A surprise hit were the Up & Go breakfast drinks which the small boy had and we will have to buy these again. I like to have a drink to give him when I pick him up from school, slurping a drink also encourages him to walk nicely, so it’s not altogether an altruistic move on my part.

This month the DB Discoveries were The Olive Shop Extra Virgin Olive Oil and Kent’s Kitchen Spicy Szechuan Posh Noodles. These were two of my favourite things in the box, I love a good extra virgin olive oil and I slosh it on almost everything, and the posh pot noodles were a lovely lunchtime treat I’ll be looking out for in the future.

Hubs enjoyed the cider, we are not big cider drinkers, but he said it was both fruity and refreshing, I had a sip and thought it’d be nice over ice. He also liked the COMPLETE Energy Bites, he loves mocha flavoured things and they’ve helped to pep him up in the mornings ready for work.

Exploring The Really Interesting Food Co.

I tried the Spanish Chickpea Casserole and the Balinese Lentil and Pepper Soup. I was impressed by the vibrant flavours and the heartiness of the casserole and the soup, I served them both with a hunk of bread and they were filling and delicious meals in themselves. They’re a great store cupboard saviour, meaning when I’m tired and hungry I could just open a tin and have a healthy meal in minutes.

Review: The New EasiYo Yoghurt Maker

This month EasiYo are launching their newly designed yoghurt maker. It’s a stylish update on the original EasiYo yoghurt maker, a fashionable red pod which makes 1kg of yoghurt each time. I was sent one of the newly launched EasiYo yoghurt makers to try out. But what did my yoghurt loving boys think and just how easy is it to use?

The new design is quite lovely to look at, it’s all sleek and shiny and doesn’t look out of place in a modern kitchen. I unpacked it and my box contained the red pod, the 1kg yoghurt jar and some instructions. I was given the Strawberries and Cream and the Greek yoghurt with coconut flavours to try.

I thought I’d try the boys with the strawberries and cream yoghurt, this is the flavour we buy from the supermarket the most, so I thought it’s make for a useful taste test.

Making EasiYo yoghurt is incredibly easy and much quicker than I thought it would be. The instructions are on the back of each packet anyway, but you simply mix the sachet with water, give it a good shake and then put it in the pod which is half filled with boiling water. Leave it overnight and you’ve got 1kg of yoghurt to enjoy!

In the morning I had a quick look at it, put the yoghurt jar in the fridge and left it until teatime. So what did the boys think? Well… they loved it! The small boy, originally sceptical that it didn’t come in a pot has been demanding seconds and even thirds of it. It’s thick, creamy and delicious and contains no artificial ingredients, is gluten-free, vegetarian and full of nutrients. I’m sold on EasiYo, and I think he is too!

It’s incredibly easy to make, and it makes 1kg of yoghurt at a time, which makes it really economical. Plus it’s pretty fun to make with the kids, especially ones who like mixing things up in the kitchen. There are a huge range of flavours and styles of yoghurt to choose from, from very low fat yoghurt to indulgent creamy yoghurt. We’re looking forward to trying them all out!

We’ve been receiving the Degustabox for a few months now and each time we get a box of interesting new things to try. In the spirit of interesting and new, I thought I’d try my hand at making an unboxing video, which you can see below. It’s basically me unpacking my Degustabox August 2015 and seeing what’s in there. As well as the monthly Db Discovery – Delicious Alchemy Brownie Mix. This is an easy to make gluten-free and dairy-free chocolate brownie mix. I confess at the time of writing I’ve not yet made it as we didn’t have any eggs in the house, but it looks really simple and it’s pleasing to me that it’s gluten and dairy free, meaning when I have GF friends round I can offer them a homemade treat.

It seems like a really big box this month, packed full of goodies. The Bahlsen and Walkers biscuits were naturally the first things to be demolished by me and my two hungry boys. The pasta and tomato sauce from Barilla were a hit, pasta is always a popular meal though.

What I was most interested to try were the Dr Oetker Mug Cakes – these were ridiculously easy to make and you had an actual cake to eat which took less than 2 minutes to make, which is ideal for those times when you just need emergency cake. The rich chocolate cake was by far the best, and tarted up a bit with some fruit and maybe a dollop of ice cream you could easily pass it off as a posh pud.

Towards the end of each month I get a lovely text telling me that my Degustabox is on its way. It’s a lovely tombola of a box, filled with new, interesting, exciting and limited edition foodie treats. It’s a chance for me to discover new things all for the princely sum of £12.99, though the contents are worth more than that.

Of course, the law of averages means that I probably won’t enjoy everything in my foodie Degustabox, but the boys who have wildly differing tastes to me happily hoover up the things I’m less keen on, and vice versa.

We were sent the Quinola Mothergrain Mediterranean Quinola to try, these 150g packs cost £1.99 each and seem like a healthy option, being organic, gluten free and packed with slow release carbs. The Mediterranean Quinola contains tomato, courgette and carrots. I served it with a side of meatballs. As you can see it doesn’t photograph particularly attractively, but the small boy cleared his plate.

Degustabox July 2015

My favourite new discovery was the Newton’s Appl Fizzics, which is a fizzy apple juice. I chilled mine, as per instructions and poured it over ice. I love apple juice and a fizzy apple juice is something of a rare treat. This was zingy, refreshing and full of crisp apple flavours, and perfect to drink on a hot sunny day.

I also enjoyed the “Taking the Pea” which was a crunchy dried pea snack, along the lines of the wasabi pea, but with different flavours. As a lover of a wasabi pea these were a very welcome addition to the box.

Another big hit were the “Tasty Little Numbers”, two 200 calorie ready meals. We had the chicken tikka masala and the beef sausage and beans. Both hubs and I are on the 5:2 diet and sometimes it’s easier to ping a low calorie ready meal than faff about counting the calories in everything. There were a tasty little solution, leaving me with 300 calories to play with the rest of the day.

Introduction to Baking Class at Wilmslow Kitchen Cookery School

It’s August, which can only mean one thing – the nation goes Great British Bake Off crazy! I love baking and I class myself as an enthusiastic amateur rather than a master baker, my main problem is confidence, I look at the glorious show-stoppers on GBBO and I know my creations would be laughed out of the show tent. Thankfully (and excitingly) I was invited along to an Introductory Baking Class at the Wilmslow Kitchen Cookery School, an foodie blogger event hosted by kitchen legends – Kenwood and Currys PC World.

We were introduced to the rather beautiful Kenwood kMix mixers, they come in a variety of lovely colours and I was drawn to the teal one, which perfectly matches my blog. I did point this fact out rather loudly and hopefully, but alas my request to take it home where it so clearly belonged fell on deaf ears.

The Kenwood kMix is a contemporary version of the classic Kenwood mixer, it comes with the K beater, power whisk, flexi beater as well as a metal or glass bowl.

Sarah, David and Brian from Wilmslow Kitchen Cookery School gave us a run through of our busy afternoon of baking. In pairs (I was with Emma from Farmer’s Wife & Mummy) we were each going to make meringues, a Swiss roll and a rich chocolate tart. I was particularly excited (and terrified) as the thought of making and rolling a Swiss roll is an idea fraught with peril, the demonstration drew gasps of amazement from the watching crowd of bloggers.

We were to tackle what I thought were some fairly difficult tasks, thankfully we were expertly walked through it all and what’s more it was all very enjoyable. I have long feared the meringue, but after trying my hand at the Intro to Baking session at Wilmslow Kitchen Cookery School I went home and made my own delicious batch.

The Swiss roll was, and still is frankly terrifying, but doable, and I’ve had a request to try and recreate the recipe at home. I am increasingly diary intolerant, so decided not to use cream in my Swiss roll and was given the option of a vegan buttercream, which was half a cup of vegan soy based spread whipped with half a cup of icing sugar and a lot (their words) of vanilla extract. It was pretty yummy and I didn’t miss the cream.

Here’s what we made, the meringues were by far my favourite, the small boy liked them too. If you like a rich hit of chocolate then the chocolate tart is for you. But the Swiss roll was the winner – really light and if you’re brave, really easy to roll – honestly, if I can do it, you can too!

Judging the International Cheese Awards 2015

This week I went to the International Cheese Awards in Nantwich in Cheshire. I went last year and had a brilliant time, discovered some lovely new cheeses, met some nice new people, had an delicious lunch and ate an awful lot of cheese. I was looking forward to more of the same this year, but it was not to be. It was better!

I was really pleased and honoured to be invited to help judge four categories of cheese this year, these were –

– Class DP54 Derby Block, UK Creameries only
– Class DP179 Lighter Cheese (17-24% fat)
– Class DP133 Speciality Cheese, Hard Pressed
– Class DP170 Smoked Cheese

Nothing too alarming there. In fact I was delighted with those categories as they’re the kind of cheeses I would normally buy and eat anyway.

Dressed in my judges white coat with my clipboard tucked under my arm, me, two judges, both cheese experts, and a steward began judging. Each of us thoroughly examining the cheese, and my fellow judges, both industry experts, taking time to talk me through what we should be looking for and the typical characteristics of each cheese.

International Cheese Awards 2015

Thankfully we were all of a similar mind when choosing the winners, so there were no arguments. I made sure I went around afterwards too to make a note of any cheeses I especially enjoyed. It was an experience I will never forget, it’s not everyone who can say (and have the enamel badge to prove it) that they were a judge at the International Cheese Awards 2015.

After my official duties were over I ambled over to where the Irish cheeses were displayed and took part in their special cheese matching session, in which three superb Irish cheeses were matched with three equally delicious Irish whiskeys.

During this whiskey and cheese session I discovered this very, very sexy Brie style handmade Irish goats cheese. It’s was fantastically ripe and oozed seductively across the cheese board towards me. It was love at first bite!

It would be a cliché to say I was charmed by the Irish contingent, but I was. The whiskey was interesting, the cheese was so good (there was also a beer washed continental style cheese I need to find again) and the lovely chaps at Ballymaloe made exceedingly good chutneys and relishes, which went beautifully with the Irish cheeses. It can be slightly harder to find these lovely Irish cheeses in England, but I was told that Booths and some speciality cheese shops stock them, and the Ballymaloe relish is available in some supermarkets.

Full of whiskey and cheese I sat down to enjoy lunch, canapés, quiche and salad, a selection of desserts and of course an amazing cheese board. After lunch and much deliberation they announced the winner, the Supreme Champion UK of the International Cheese Awards 2015 was the Greenfields Dairy with their delicious crumbly Lancashire cheese.

The giant 83,000 sq ft cheese marquee was home to what felt like hundreds of trade stands, small artisan cheese producers to huge dairies as well as supermarkets; there was a chance to try every kind of cheese under the sun, and from all over the world.

Just to give you an idea of the scale of the awards, I made a short and slightly shonky film, but it gives you an idea of just how much cheese was there to be judged – this year I believe there were 4,615 entries – a record breaking year for the awards!

For me at least it was an incredibly memorable day, I became a cheese judge (with badge to prove it), I met some delicious cheeses and I made some new friends. Here’s to next years awards – sláinte!

Preview: International Cheese Awards 2015

It hardly seems like a year since I returned home from the International Cheese Awards, a bag of cheese slung over my shoulder and the inspiration for a thousand cheese boards filling my head. Since my invitation to this years International Cheese Awards arrived, I have been eagerly watching the construction of the massive (massive is an understatement really, it’s 83,000 sq ft) marquee on Twitter and sneaking a peak at some of the entries.

This year is the 118th International Cheese Awards, which are held as part of the Nantwich Show in Cheshire on 28th (judging and trade day) and 29th July 2015 (show day). This year there have been a record breaking 4,611 entries across literally hundreds of different categories of cheese, with entries from small artisan producers, to huge dairies and supermarkets. Last years Supreme Champion  was the Nottingham based Colston Bassett Dairy with their Whole Blue Stilton, and rather delicious it was too.

I’ll be there on trade day, but the 29th July sees the International Cheese Awards marquee open to the public as part of the Nantwich Show. You can take a tour of the trade stands, try a few cheeses and book in and watch a cookery demonstration by a celebrity chef – James Martin, Will Holland, Jonathon Harrison and Sean Wilson will all be there, and last year I bumped into Aldo Zilli too!

The Nantwich Show is a brilliant day out for all the family, there’s so much to see and do, the Nantwich Show is apparently the biggest agricultural show in the UK, with everything from cows, sheep, pigs and pigeons to horticulture and honey. Take a look at the vintage cars and agricultural machinery as well as the latest in tractor technology! I know my boy would love it there!

The morning of the judging day is a hectic whirlwind of activity, with the marquee packed full of huge wheels of cheese, it is a sight to behold and enough to keep several large villages in cheese for a lifetime. The white-coated judges patrolling the tables, deliberating over their category and choosing the very best cheese. It’s an opportunity for non judges like me to take a turn around the trade stands and explore new cheeses and other dairy products (though chocolate cheese has yet to find a place in my heart).

The afternoon of judging day will this year see 1,144 people sitting down to a delicious four course meal, followed by the announcement of the winners and of course the supreme champion. The International Cheese Awards is the largest dairy hospitality event in the UK and the highlight of my foodie calendar!

Review: Free & Easy Foods

These days food intolerances are being taken more seriously. I know several people who are gluten-free and worryingly I am starting to develop a dairy intolerance, meaning if I have a lovely unctuous cheese sauce or nice creamy pudding I am very, very ill, so I’m starting to avoid dairy as much as I can, which does make life a little bit sad for someone who loves cheese as much a I do.

I discovered the Free & Easy Foods range, which are a boon for people with intolerances, or those who just wish to avoid certain foods. The Free & Easy products range from sauces and gravies, through to ready meals,curry pastes and natural soft drinks. Free & Easy Foods are available from health food stores, fine food retailers and online.

Free & Easy Foods are free from wheat, gluten, dairy, soya, celery, mustard, nuts and preservatives. They are low fat and suitable for both vegetarians and vegans.

I was sent a selection of nice things to try. I almost wept with joy at the sight of the red onion gravy. I’m a vegetarian and good gravy in a packet is hard to come by. This had sausage and mash written all over it and it was delicious, really flavoursome and with nice chunky pieces of onion. It would be brilliant with a nut roast!

The next thing we tried was the dairy free cheese sauce, I wasn’t sure what to expect but I griddled some courgettes and tossed them through the sauce with some tagliatelle. Neither of the boys notices the dairy free cheese sauce was missing the key ingredient and I wasn’t really ill afterwards. This is definitely going to be a staple in my cupboard from now on.

Working from home I do like to keep a tin or two of soup or something heartier in the house for those times I fancy a hot lunch. I tried the lentil and red pepper soup and the organic three bean chilli which were both perfect for lunch, really tasty and hearty. I ate them with a chunk of fresh bread and they kept me going all afternoon.

Lastly we tried the tikka curry paste and the rogan josh curry paste. These were really easy to use. For the boys I just marinaded some chicken in the paste for a few hours and then cooked the chicken in a sauce I made with some more paste, vegetables and reduced fat coconut milk, I served this with rice and they really enjoyed it. I made a veggie version of the curry using quorn, but you could also use it with paneer or just lots of lovely fresh vegetables.

The Free & Easy Foods range is great if you’re avoiding certain things in your diet, the food doesn’t taste like you’re missing out on something, which is a very good thing. Free & Easy foods are packed with flavour and are low fat and healthy, what’s not to love?
