Recipe: Sticky Rosé Braised Ham Hock

I was sent some Marques De Caceres wine to use in a recipe. All images and opinions are my own.

I really enjoy cooking with wine. Not just the kind of cooking where you’ve got a glass of wine on the go to keep you company while you stir the pot; but the kind where you use a whole bottle and slowly cook a piece of meat until it virtually falls apart. This week I made an unctuous Sticky Rosé Braised Ham Hock using virtually a whole bottle of Marques De Caceres Rosado Rosé, and it was worth the wait.

I’ve recently decided to make more of an effort to buy better quality meat. So this week I popped to our local butchers, Little Pigs in Didsbury to pick up some sausages and chicken. I spied a ham hock for £3.50. I’ve never cooked with ham hock before, but after a chat with the butcher he gave me a few tips and off I went to have a think about what I was going to do with it.

I decided that low and slow would be the way to go with my ham hock. Braised in a bottle of Marques De Caceres Rosado Rosé and some herbs for three hours, I had a feeling it would be good. I was almost right, it was great!

Recipe: Sticky Rosé Braised Ham Hock

I thought a bottle of Marques De Caceres Rosado Rosé would work well with the ham hock. It’s a crisp rosé made from a blend of Tempranillo and Garnacha grapes and it has hints of redcurrants and aniseed. It’s a lovely, easy drinking rosé, and just the thing to drink on a summer evening.

My Sticky Rosé Braised Ham Hock does take some time to cook to perfection, but the results are well worth taking some time over.

Sticky Rosé Braised Ham Hock

Ingredients:
1 red onion, sliced
1 Ham Hock
A bottle of Marques De Caceres Rosado Rosé
3 garlic cloves, peeled and halved
2 bay leaves
10 sprigs of fresh thyme
1 teaspoon of pink peppercorns
2 tablespoons of runny honey
1 tablespoon of English mustard

Recipe: Sticky Rosé Braised Ham Hock

Method:

Pre-heat your oven to 200°. Wash your ham hock under running water, if you don’t do this it will be so salty it will be virtually inedible. Put your ham hock in a large lidded casserole dish and add the sliced red onion, wine, garlic, bay leaves, thyme and peppercorns. You might need to top up the liquid in the pot up with some water, it should just about cover the ham hock.

Put the lid on the dish and put in the oven for 3 hours. Make sure you check it every hour or so, adding extra water if it needs it and turning the meat in the pot. When it’s ready the meat should just fall off the bone.

Remove the meat from the dish and set aside. Sieve the liquid in the casserole dish into a pan and reduce the amount of liquid by about half. This just means simmer it until there is half the liquid in the pan than when you started. Add the honey and mustard and whisk them into the sauce.

Take the meat off the bone and remove the layer of fat from the meat. Lay the meat in a roasting tin. Pour over the reduced liquid and put it back in the oven for 20 minutes, turning and basting the meat half way through. Remove from the oven and serve with a drizzle of the sticky sauce.

I served my Sticky Rosé Braised Ham Hock with creamy polenta and asparagus; but it would be great on buttery mashed potato or served in a similar way to pulled pork.

For just £3.50 we got a really good meal for four people. The rosé really helped to give the rich glossy sauce a distinctive flavour. For such a delicate wine, the Marques De Caceres Rosado Rosé made such a robust sauce. Delicious!

Kids Crafts: Disney Pixar Cars 3 Aquabeads Playset

Despite the recent sunshine, we have had a couple of rainy days. Over half term we had a rainy afternoon and decided to spend it doing some crafts. I had put aside Disney Pixar Cars 3 Aquabeads Playset for a rainy day, so we decided to crack it open and make our own Lightning McQueen!

The Disney Pixar Cars 3 Aquabeads Playset contains a table tray, a bead palette, four templates, a sprayer, a bead peeler and 7 different colours of beads. The set is suitable for ages 4+ and it was just the thing for my 7 year old. Aquabeads (and any bead craft) can be quite fiddly for little fingers, but this is what makes them excellent for fine tuning hand-eye co-ordination and working their fine motor skills.

There are four templates to follow in the set; Lightning McQueen, Cruz Ramirez, Mack and Jackson Storm. The templates each show two sections of car, one is the main body and the other is a section which you make separately and then stick on with water once they’re both dry. This makes them into 3D characters.

The boy look his time making Lightning McQueen. He struggled a bit to put the individual beads on the board, so I lent him my rainbow bead pen from my Aquabeads Deluxe Studio set and then he just rocketed through. He spent around 40 minutes carefully putting all the beads on the board with the template underneath. Then he sprayed it with water and we left it to dry for the afternoon.

The instructions say that you can peel the beads from the board after ten minutes; but we find if you leave them for longer, then they set a little better. Once they were dry and peeled from the board we then sprayed Lightning McQueen all over and fixed the 3D part to his front; then we left him to dry a little longer.

He was pleased with how his Lightning McQueen turned out. He was easy to make and Aquabeads are a really lovely rainy-day craft for both kids and adults alike.

Review: Orchard Toys What a Performance Game

This week we’ve been playing a new board game from Orchard Toys – What a Performance! It’s kind of like charades, but with a lot more going on. We properly laughed when we played this game and it would be a great game for small-ish groups of people or families.

What a Performance is great to get the whole family laughing and playing together. Race your way around the performance board to be the first player or team to reach the finish. Along the way you’ll have to act out a scene, make lots of fun noises, do funny actions and activities along the way. Can you pretend to be a monkey, make a noise like a firework or wiggle your ears? If you can’t, use the magic decoder and reveal your hidden forfeit on the back of the cards!

There are over 300 fun challenges to perform, so there’s never a dull moment.

Review: Orchard Toys What a Performance Game

The box contains a jigsaw game board, 100 activity cards, a spinner, a sand timer; a card holder, a performance star, four character stands; four playing pieces, a magic decoder, a dice and an instruction leaflet.

The game is fairly simple to set up. You put the jigsaw board together, this comes in four pieces and takes seconds to do. You choose which colour you will be, red, green, yellow or blue and take your playing pieces and put them at the start.

The youngest player starts by rolling the dice and moving along the board accordingly. When you land on a square Say/Act/Do you take a card and read the corresponding instruction. If the instructions has “Guess” written on it, the other players have to set the timer and guess what you’re doing within the time. There are other squares, Spin means you spin the spinner which will choose your challenge. Landing on the ? square means you take a card and using the magic decoder, you follow the hidden instructions on the back of the card.

Review: Orchard Toys What a Performance Game

It’s all very simple and really lots of fun. The game had us doing monkey and dinosaur impressions, sit ups, touching our toes, it had us wiggling our ears and talking in silly voices. It was tremendous fun and just the kind of thing to bring out the silly in anyone.

As with all Orchard Toys games, What a Performance does have some educational benefits. It promotes imaginative play, encourages personal and social skills and can encourage group play. I think one of the biggest things we noticed with it, was it was really great for getting him to think about how to follow the instructions. This gave him more confidence to stand up and be silly, which is an essential life skill, or it is in my book.

What a Performance is a properly fun game. It’s just the thing for building a bit of confidence whilst having a whole lot of fun!

What a Performance is suitable for ages 5 to adult and for 2 or more players. It costs £16.50 and is widely available.

Eight Unmissable Family Festivals for 2018

The last few years have seen a huge increase in family festivals in the UK. We’ve been to a few of them, this year we’re going to both the Timber Festival and Just So Festival. There are a few other festivals happening over the summer, here’s our pick of fabulous family festivals this year…

Timber Festival, 6th – 8th July

July sees the first ever Timber Festival.  Timber is set to be an extraordinary new camping festival exploring the transformative impact of forests. Music, art, philosophy and sustainability. Timber takes place on the 6th – 8th July in Feanedock, in the heart of the National Forest. The Timber Festival is set to be a thought-provoking three days in the forest, getting back to nature and learning to love the woods.

It is a celebration of great food, axe throwing, campfire cooking, group sing-a-longs, comedy, beer, raucous music, poetry, literature and so much more. It’s a real back to nature experience for the whole family!

Bluedot Festival, 20th -22nd July

Bluedot is really unique festival, located in the incredible grounds of Jodrell Bank Observatory in Cheshire, it’s an event that brings together science, education, music, food and culture and wraps it up in a big festival shaped bow. This year the headline acts at Bluedot are The Flaming Lips, Future Islands and The Chemical Brothers and each day is packed with really interesting things to see and do.

Geronimo Festival / Eight Unmissable Family Festivals for 2018

Geronimo Festival, 30th June – 1st July

Geronimo has been going for a few years now. This family festival features the stars of CBeebies and lots of old favourites, plus a host of new activities. When we visited Geronimo in 2016, we loves the arena area which had different shows on throughout the day. There are lots to see and do, but do take a picnic!

Lymm Festival, 21st June -1st July

Lymm Festival is a 10 day festival which runs each year in the lovely Cheshire town of Lymm. The Lymm festival features a wide range of events celebrating various aspects of the village, from the amazing Transport Day where the village is filled with all kinds of transport, old and new including the Batmobile and steam engines; to foodie events, music, literature, comedy, charity dog walks. We’ll be going along this year, so do have a look at what’s on to see if anything floats your boat!

Foodies Festival, various dates

The Foodies Festival does an annual summer tour around the UK, but sets up camp in Cheshire each July. It’s a real celebration of global food with stands and stalls from all over the world. We have visited the festival a few times over the years and it’s an interesting day out for foodies; they even have special cooking sessions and demonstrations for children!

bOing! International Family Festival, 25 & 26 August

The bOing! International Family Festival returns to Canterbury this August Bank Holiday to celebrate its 5th birthday in style, with its biggest and best line up yet. bOing! showcases the very best in theatre, dance, music, films created for all ages across Europe. This (mostly) free family festival is a brilliantly theatrical day out for all the family.

There are so many great family festivals on this summer, whatever you’re interested in, there’s bound to be something to suit your family. Which festivals are you going to this year?

Preview: International Cheese Awards 2018

If you love cheese as much as I do, then the idea of spending some time exploring and sampling some of the best cheeses from around the world would be your idea of heaven. I’m pleased to say that once again this year I’ll be a judge at the International Cheese Awards. But what else going on in the cheese marquee this year?

The International Cheese Awards is part of the Nantwich Show which takes place on Wednesday 25th July this year. The Nantwich Show is a huge agricultural show and a brilliant day out for families. Early bird tickets are available – adults £15, children’s £5, or just £35 for a family ticket (2 adults and 2 children). Although tickets will also be available at full price on the gate on the day.

It’s a great opportunity to try some new cheeses, plus some of the exhibitors have special offers on, so you can go home laden with enough cheese to keep you going for the summer (that’s what I do).

Easy Recipe: Quick Coffee Cupcakes

There’s nothing quite as good as a cup of coffee in the garden with a little sweet treat to go with it. This week I knocked up a batch of my quick coffee cupcakes and sat in the garden in the last of the sunshine before Storm Hector swept in and spoiled all our summer fun.

Cupcakes are something I make quite a lot of at home. They’re so quick and easy to do and I often have a fresh batch of buttercream in the fridge for emergencies. I know this is potentially an unpopular opinion, but cupcakes are just buns with fancy icing. If you can master a basic swirl people think you’ve got mad baking skills. I’m not going to win any prizes for my decorating, but I can do some basic piping, enough to turn a humble bun into a cupcake. If I can do it, you can too!

Easy Recipe: Quick Coffee Cupcakes

These quick coffee cupcakes are great to make in a hurry. I piped plain vanilla buttercream on these, but if you’re baking for a real coffee fan, then you can easily make coffee buttercream. You can ramp the coffee flavours up further by adding a Roasted Coffee Cacao Truffle from Beech’s Fine Chocolates to the top, this turns a simple cupcake into a lovely grown up after dinner treat!

Quick Coffee Cupcakes

Ingredients:
150g butter or margarine
150g caster sugar
3 eggs (large)
150g self raising flour
1 teaspoon baking powder
1/2 teaspoon vanilla extract
1 heaped teaspoon of instant coffee dissolved in 1/2 tablespoon of milk

For the buttercream:
250g icing sugar
250g butter (softened)
1/2 teaspoon vanilla extract
Beech’s Fine Chocolates Roasted Coffee Cacao Truffles

Method:
Pre-heat your oven to 180° and put paper cases in a bun or a muffin tray.

Cream your butter and sugar in a large mixing bowl. Add the rest of the ingredients and using a hand mixer combine until the batter is smooth and airy.

Dollop a large dessert spoon of the cake batter in each case and bake in the oven for 20 minutes. Once cooked remove from the oven and leave cool on a rack.

While your cupcakes are cooling, sift your icing sugar and beat together with the softened butter. Add your vanilla extract and beat it in thoroughly.

Once your cupcakes are cool, put your vanilla buttercream in a piping bag with a star piping nozzle – I use a Wilton 2D nozzle. I did a standard buttercream swirl, if you’re not sure how to do it, watch this short video.

I then decorated the buttercream swirl with a Roasted Coffee Cacao Truffle from Beech’s Fine Chocolates. Serve with a cup of very good coffee.

If you wanted to up the coffee content of your coffee cupcake, you could add some coffee to your vanilla buttercream. Dissolve some coffee in a splash of milk and beat it through thoroughly.

The Milk Chocolate Honeycomb is handmade honeycomb chunks coated in milk chocolate. It’s what I remember as cinder toffee but covered in really silky chocolate. They’re more than a bite size and a couple is just enough of a sweet treat for elevenses. They’re really, really good, like a grown up crunchie but better.

The Cocoa Nib Cacao Truffles are really rich, smooth dark chocolate with crunchy cacao nibs speckled through and dusted in cocoa powder. They’re delicious and they taste so grown up. They’re so smooth and creamy – a real treat. Out of the three different Beech’s Fine Chocolates Gourmet Packs I tried, these cacao truffles were my favourites.

Lastly the Roasted Coffee Cacao Truffles, they look very similar to the cacao truffles, but they’re slightly darker and have a subtle coffee aroma. They’re made with real coffee and have little crunchy pieces of coffee beans throughout. They’re as smooth as anything and would be brilliant with a good cup of coffee, a real after dinner treat.

Crafts: Make a Tour de France inspired Bicycle Card

This year’s Tour de France takes place from Saturday July 7th to Sunday July 29th 2018. This is the 105th Tour de France and it is made up of 21 stages, covering a total distance of 3,351 kilometres. The Tour de France is a real spectacle, especially for fans of cycling. One of the sponsors of this year’s event is Bostik, and as a Bostik Craft Blogger I’ve been asked to put together a craft to mark the 2018 Tour de France!

I admit to being a bit out of my depth talking about the Tour de France. I know very little about cycling, other than how to ride a bike. But I do know how to stick some buttons onto some card, so I will play to my strengths and tell you how I made this Tour de France inspired bicycle card.

How to make a Tour de France inspired Bicycle Card

You will need:
A blank greetings card and envelope
Two large buttons and one small one
Some coloured card
Some small coloured foam pieces
Bostik Foam Pads
Bostik White Glu
A pair of scissors

Crafts: Make a Tour de France inspired Bicycle Card

To make your Tour de France inspired Bicycle Card:

Decide where best to stick your two large buttons on the card. These will be the wheels of your bike. I fixed mine on with four little foam pads. Take the smaller button and stick that on where the chain goes, again using a foam pad.

Carefully using some scissors, cut out some thin lengths of card for the frame of the bike. It will take a few minutes to get the measurements and angles right. Glue the coloured card onto your greetings card with the Bostick White Glu. Press the edges down and leave the card to dry a little while. You could also make the frame out of pipecleaners if you’d like.

While the coloured card is drying, carefully cut out the shape of a pair of handlebars and a cycling seat out of the coloured foam. Glue these pieces into position and leave the card to dry. Your card is now ready to write and send off to anyone who is mad about bikes.

Unless, unless when you’ve finished it and put all your craft stuff away you realise you’ve forgotten the pedals. In which case you can either deem them non-essential, or you can draw them on with a pen. Failing that you could unpack all of your craft stuff and stick on a couple of small rectangular foam pieces where the pedals should be. I’ve left them off because my bike is fine without them. Obviously.

Children’s Books: Five Awesome Activity Books

The summer holidays are only a few short weeks away and I’m starting to think about how we can fill those (hopefully) long summer days. One thing is for sure, we will need things to entertain the boy during long journeys and when we’re out an about. We have an activity bag which we can grab when we go out; there’s usually a packet of Top Trumps, some activity books and some pens. That bag is a real life saver and contains enough for a few hours of fun.

We try not to stick him in front of a screen for too long. For two reasons; we’re out as a family so all of our screens are off and we’re trying to be social. He also turns into a real grumpy so and so if he watches too much stuff on the iPad. With summer fast approaching, the activity bag needs some new activity books, so here is our pick of five awesome activity books.

Toy Review: Meet the New StikBot Dinos

StikBots were launched a couple of years ago now. They’re little plastic figures with sticky suction cups on their hands and feet which you can animate. There’s even a free app you can use to animate them. If you don’t fancy animating them, you can just play with them normally. I’ve heard they make good fidget toys. We were sent some of the new StikBot Dinos range to have a look at, so what did we think?

We were sent two StikBot Dinos to play with. The StikBot Mega Dino Brontosaurus and a StikBot Dinos Egg. The StikBot Dinos Egg is one of 24 StikBot Dinos to collect. There are Seven different Dinos in nine different colours and some rare ones too. The egg comes with a collectors leaflet, so you can see what you’ve got and how rare it might be. When we opened ours up we discovered that we’d got a rare one.

These StikBot Dino eggs really tap into the trend for blind-bags and collectibles. They cost around £6.50 each and are available online and in some toy shops.

The Stikbot Dinos have a really unique design, with suction-cup hands and feet, so you can position them on any flat surface. Their legs, body, mouth, tail and neck can be positioned in all kinds of different angles which makes them great to make stop-frame animations with.

The StikBot Mega Dino Brontosaurus is bigger than the egg and they cost around £9. You can choose from Stik T rex, Stik Carnotaurus or Stik Brontosaurus, each is available in three different colours.

Th sticky pads make these StikBots perfect for making stop-frame animation films using the free to download mobile Animation App. The app is easy to use and helps you create a professional animation, with built-in music and sound effects.

I wasn’t sure what my 7 year old would think of the StikBot Dinos but he really enjoyed playing with them. We haven’t tried making an animation yet, but he’s played with them all weekend, making a Jurassic story of his own. I can see us putting together a StikBot animation in the future as he’s very keen to try them out, so watch this space for the next dino blockbuster movie!
